Small exposures to fruit flesh or minimal pit contact produce only the non-specific GI response to any novel food item. The amygdalin content in trace amounts from the flesh or skin is hydrolyzed too slowly and in too little quantity to produce meaningful cyanide levels.

Oxygen cannot be utilized despite normal delivery, causing the cells to switch to anaerobic metabolism and rapidly exhaust their energy reserves. Bright red venous blood results from oxygen accumulating because cells cannot extract it.

Stone fruit pits (and seeds, stems, leaves) contain amygdalin, a cyanogenic glycoside.
